Ingredients (serves 4):Method: Peel grapfruit in a bowl, to retain juice. Separate into segments.
Wash and slice fennel thinly, keeping a few leaves back for decoration.
Take 4 plates and arrange grapefruit and fennel together.
Make a dressing, using 6 tablespoons olive oil, lemon juice and juice saved from the grapefruit. Season.
Drizzle sauce over each plate, leave to chill for 3 hours.
Decorate just before serving.
