Venetian mackerel

Origin of dish:  Italy
Type of cooking:  Hob
 
Preparation time: 5 minutes
Cooking time: 10 minutes
 
Ingredients (serves 6):


Method:

Fry the fish in white wine for 10 minutes.

Cover with white sauce, add herbs.

Sprinkle with chervil and tarragon, stir well and cook for 5 more minutes.

Boil potatoes and serve immediately with fish.
Advice: Recommended wines:
- Alsace: Silvaner, Pinot blanc
- Bordeaux: Entre 2 mers
- Bourgogne: Maçon, St Véran
- Loire: Sancerre, Pouilly
