Anchovies in vinegar

Type of cooking:  No cooking needed
 
Preparation time: 5 minutes
 
Ingredients (serves 4):

    1 kg anchovies
    vinegar
    garlic
    parsley
    salt
    olive oil

Method:

Allow 24 hours marinating time.

Remove the heads and backbones from the anchovies and wash carefully.
Open them out.
Salt and put to one side in a dish with finely chopped garlic and parsley.
Pour vinegar over and leave to soak for 24 hours.
Serve with olive oil.

Nice recipe but no amount of salt to add to the fish, so for 1kg of anchovies you need 800g-1kg of salt as anchovies can take lots of salt? Any suggestions? Thanks, L.
