Ingredients (serves 4):8 eggs
2 large potatoes
Salt & pepper
Olive oil
Method: Peel, wash and chop the potatoes into small chunks.
Season.
Heat the oil in a large frying pan.
Sauté the potatoes until golden.
Beat the eggs, lightly salt and add potatoes.
Mix and leave to settle for a couple of minutes.
Pour the mixture into the frying pan and cook for 5 minutes.
Cook for 3 minutes on the other side, turning with the help of a plate over the frying pan.
Serve hot or cold, as tapas.
