Lemon and lime soufflé

Preparation time: 20 minutes
Cooking time: 40 minutes
 
Ingredients (serves 4):

    1 orgnic lemon
    1 organic lime
    250ml milk
    150g caster sugar
    4 eggs + 1 egg white
    3 tablespoons cornflour
    20g butter + 15g to grease dish

Method:

Preheat oven to 350°F (180°C).

Finely grate the zest from the fruit and squeeze.

Gently bring milk to the boil, with sugar.

Separate eggs.

Mix cornflour with 4 tablespoons lemon and lime juice, add to milk.

Thicken over a low heat, then remove from hob and add butter and egg yolks. Leave to cool.

Beat egg white until stiff and add mixture.

Grease an oven-safe souffle dish and pour the mixture in, until two thirds full.

Place on middle shelf of oven and bake for 30 to 40 minutes, until souffle has risen.

Decorate with zest and serve immediately.
