Flambéed crêpes with rum and lime

Preparation time: 15 minutes
Cooking time: 5 minutes
 
Ingredients (serves 4):

    8 crêpes
    1 lime
    125g softened butter
    2 tablespoons icing sugar
    60ml rum

Method:

Gently heat crêpes in a frying pan.
Zest the and juice the lime. Mash the butter with a fork, then add zest and lime juice, icing sugar a teaspoon rum. Mix well.
Spread a little of this butter onto each crêpe, then fold in four. Place in a non-stick frying pan.
gently heat to melt butter, then cover with rest of rum. Turn heat down and flambé briefly.
Serve immediately, once flames have died down.
