Ingredients (serves 6):

    1 litre full-cream milk
    2 vanilla pods
    8 egg yolks
    200g granulated sugar

Method:

Heat the milk.
Split the vanilla pods lengthways and add to the milk.

In a salad bowl, blanch the egg yolks and sugar using a hand whisk then pour the hot milk in gradually, stirring constantly.

Put back over a low heat and stir with a spatula until thickened.

Pour into the bowl and serve immediately.
