Lime mousseline sauce

Origin of dish:  Europe
Type of cooking:  Hob
 
Preparation time: 15 minutes
Cooking time: 10 minutes
 
Ingredients (serves 4):

    160 calories per portion
    1 egg + 2 yolks
    Juice of 3 limes
    100g low-fat butter

Method:

Beat the eggs and lime juice in a bowl over boiling water (a bain-marie).
Remove from heat, chop butter into small pieces and add to sauce, stir until melted.



Advice: Excellent with fish or salad.
