Anchovy paste

Ingredients (serves 6):


Method:

Blend anchovies in a food processor.
Peel and crush garlic, then mix with vinegar and pepper.
Stir in oil little by little while whisking mixture, as if making a mayonnaise.
Add anchovies.
Serve as a dip with crudités, or with toast.
Advice: Anchovy paste makes great party food and goes well with cocktails, sparkling white wines and pastis.
