Origin of dish:  Italy

Method:

Makes 800g of biscuits:


Preheat oven to 450°F (235°C).
Work butter, sugar and vanilla together.
Add egg whites two by two, folding in carefully each time.
Add cream and sieve in flour.
Whisk, until you have a smooth paste.
Grease and oven tray and arrange spoonfuls of mixture of about 2cm in diametre, with enough room for them to spread during cooking.
Bake for five minutes.
Roll around pencils for as soon as taken out of oven.

Will keep for up to a month in an airtight container.

Advice: Try making a fruit or chocolate filling - pipe or spoon in after rolling (allow to chill first).
