Pineapple carpaccio

Preparation time: 180 minutes
 
Ingredients (serves 4):


Method:

1.Peel pineapple and slice very thinly with a sharp knife.
2.Chop fruit in season into small pieces, then marinate in lemon juice mixed with juice and zest of citrus fruit.
3.Add pienapple for a few minutes.
4.Arrange fruit on a large serving plate, or individual plates.
5.Just before serving, add a tablespoon of low-fat berry sorbet, creme fraiche or fromage frais.
Advice: ·This dish can easily be prepared in advance - the longer you leave the fruit to marinate, the better it will be!
·Carpaccio of Pineapple makes a great, vitamin-packed dessert, which you can enjoy all year round. Just change the fruit that you put with the pineapple according to what is in season: try grapes in the Autumn, citrus fruit and apples in Winter and soft fruit in Summer!
·Add a finishing touch with herbs that go well with sugar, like mint, coriander or tarragon.
