Ingredients (for 4 people) :

    -2 eggs
    -150ml natural yoghurt
    150ml Merrydown medium cider
    -250g plain flour
    -1tsp baking powder
    -50g caster sugar
-3 Granny Smith apples, peeled & grated
    -zest of 1 lemon
    -a little oil
    Maple cider sauce:
    -150ml Merrydown medium cider

Mix the eggs with the yoghurt and cider. Sieve the flour and baking powder into a large bowl and add the sugar.

Gradually beat in the egg mixture until smooth. Stir in the grated apples and lemon zest.

Make the maple cider sauce by pouring the cider and maple syrup into a small pan, bring to the boil and cook until thickened and syrupy.

Heat a little oil in a heavy based frying pan. Place spoonfuls of the batter into the pan, flatten them a little. Cook until golden then flip over and cook the other side.
