Ingredients (for 4 people) :
-2
eggs
-150ml natural
yoghurt
150ml Merrydown medium
cider
-250g plain
flour
-1tsp baking powder
-50g caster
sugar
-3 Granny Smith
apples
, peeled & grated
-zest of 1
lemon
-a little oil
Maple cider
sauce
:
-150ml Merrydown medium cider
-100ml maple syrup
-squeeze of lemon
juice
Method:
Mix the
eggs
with the
yoghurt
and
cider
. Sieve the
flour
and baking powder into a large bowl and add the
sugar
.
Gradually beat in the
egg
mixture until smooth. Stir in the grated
apples
and
lemon
zest.
Make the maple cider
sauce
by pouring the cider and maple syrup into a small pan, bring to the boil and cook until thickened and syrupy.
Heat a little oil in a heavy based frying pan. Place spoonfuls of the batter into the pan, flatten them a little. Cook until golden then flip over and cook the other side.
Serve the
pancakes
with the maple cider sauce drizzled over.
