Breakfast bread with honey butter

Ingredients (makes 1 loaf) :

    For the bread:
    -500g strong flour and extra for kneading
    -55g melted butter and extra to grease the dish
    -2 teaspoons fast action dried yeast
    -1 teaspoon cinnamon
    -Zest of 1 orange
    -250ml warm semi skimmed milk
    -1 egg
    -140g ready to eat semi-dried apricots - quartered
    -140g ready to eat semi-dried prunes - quartered
    -4 tablespoons runny honey
    -1 teaspoon salt
    -2 teaspoons vanilla extract
    -2 tablespoons honey to finish

    For the honey butter:
    -115g softened butter
    -100ml runny honey
    -1 teaspoon cinnamon


Preheat the oven to 190°C/375°F/Gas Mark 5 before you begin.

To make the bread combine the yeast, flour, cinnamon and salt into a large bowl and then stir in the fruit and orange zest.

Next whisk the egg, vanilla extract, honey and melted butter into the warm milk.

Now make a well in the flour mixture and fold in the milk mixture to make the dough.

Turn the dough out onto a floured board or work surface and knead with your hands until it becomes smooth and elastic.

Roll the dough into a long roll approximately the same size as your baking dish. Place the dough into the dish and press to fit the edges, now cover with a piece of oiled cling film.

Set in a warm enclosed place to rise for around 1-1½ hours or until the dough is soft to the touch and has completely risen.

Remove the cling film and bake for 35 minutes. Once baked brush the loaf with honey and leave to soak in for an extra little something!
