Ingredients (for 8 people) :Method: Heat 1 tbsp of oil in a frying pan and fry the onion over a low heat for 3-4 minutes until soft. Put the mashed potato and sprouts into a bowl and stir.
Add the cooked onion, herbs and eggs, season with black pepper, and mix well. Put another tbsp of the oil in the fry pan and warm over a medium heat.
Fry spoonfuls of the mixture for about 6-8 minutes, turning once using a fish slice, until lightly browned on both sides (you may need to cook the mixture in batches - using some more oil, depending upon the size of your pan).
Serve immediately with a handful of grilled cherry tomatoes and any cold leftover meat you have to hand.
