Chutney Burgers with Tarragon Mayonnaise

Ingredients (for 4 people) :

    -450g/1lb beef or lamb mince
    -1 small onion, peeled and grated
    -4tbsp prepared chutney or fruit pickle
    -1-2tbsp freshly chopped flat-leaf parsley
    -Salt and freshly milled black pepper

    For the Tarragon Mayonnaise:
    -7fl oz prepared mayonnaise
    -1-2tbsp freshly chopped tarragon
    -Salt and freshly milled black pepper

Method:

Mix all of the ingredients together in a large bowl. Shape the mixture into 4 patties using damp hands.

Cover and chill the mixture for 20 minutes.

Meanwhile prepare the tarragon mayonnaise; mix the tarragon, mayonnaise and season in a small bowl.

Cook the burgers under a preheated grill or on a BBQ for approximately 6-8 minutes on each side or until cooked to your preference.

Serve in bread rolls with the mayonnaise and a crisp leafy salad.
