Cod Passata Pomodoro

Type of cooking:  Hob

Cooking time: 20 minutes
Ingredients (4) :

    -800g fresh thin cut cod fillets
    -40g plain flour
    -40g thin sliced red onion
    -400g fresh and cleaned baby leaf spinach cut coarsely
    -200g diced celery
    -400g PizzaExpress Passata pomodoro
    -40 dry black olives
    -60ml extra virgin oil

    For mashed potato:
    -500g potatoes
    -50g butter
    -25ml milk
    -Salt and freshly ground black pepper


Place the onions and the diced celery in a frying pan with the olive oil and simmer for about 10 minutes.

Add the spinach, the Passata, black olives and cook well at low temperature; cover the pan with lid.

At the same time boil the potatoes in water for 10-15 minutes or until fluffy.

Drain and mash the potatoes, then stir in the butter and milk and season with the salt and pepper.

Toss the cod fillets in the flour and add them to the sauce.

Cook on a low heat for approximately 10 minutes. Once cooked, place the cod on a flat plate and top with the salsa.
