Ingredients (for 6 people) :
-18 Chicken drumlets Method: Start by rinsing the chicken drumlets with salt lemon and cold water and leave to drain.
-3 cups of Scallion
-2 Garlic Cloves
-50g of dried thyme
-1 tsp of salt
-1 ½ tsp of ground all spice
-1/4 tsp of freshly grated nutmeg
-1/4 tsp of cinnamon
-1/4 cup of jalapeno peppers
-2 tsp of grounded pimento
-1 tsp of soy sauce
-1/4 cup of vegetable oil
-1 tbsp of soft brown sugar
-1 tbsp of paprika
For the Ketchup:
-3 tbsp of Heinz Tomato Ketchup
-1 tbsp of HP Brown Sauce
-1/4 of an onion
-2 Cloves of Garlic
-1/2 a scotch Bonnet
-1 tsp of Worcester Sauce
-1 tsp of soft Brown Sugar
-2 Sprigs of Thyme
-1 tsp of ground pimento
-1 tsp of sambolic chilli
Then roughly chop the onion, wash the scallion and roughly chop this too.
Peel the garlic, take the stems off the thyme and then blend the onion, scallion, garlic, thyme, salt, all spice, nutmeg, cinnamon, jalepeno, pimento, soy sauce, oil, the soft brown sugar and paprika in a food processor.
Now time to prepare the ketchup. Peel Onions and garlic and roughly chop.
Next de-seed the scotch bonnet - be careful it's hot!
Take the leaves of the sprigs of thyme and then get all of the ingredients and place in the food processor and blend to a smooth paste
Preserve in a terrine 70cl Jar and place in the refrigerator.
Now it's time for your chicken, in a large shallow dish arrange chicken drummets in one layer.
Then spoon the marinade over the drummets and toss in the bowl, cover and place in the fridge and leave to marinade for 30mins.
When marination process has finished place in a greased tray and put it in the oven to cook for 25 mins on a moderate heat 150c.
When the chicken is golden brown take out of oven remove from tray. Leave to cool and get your ketchup out of the fridge.
Make it all look beautiful then serve!
