Fox's Christmas Pudding

Ingredients (makes 1 litre) :


Place the double cream, milk, vanilla bean paste and orange zest into a pan. Bring to the boil then remove from the heat.

In a large bowl whisk the egg yolks, soft brown sugar and orange liquor until pale.

Whisk the hot cream mixture very slowly into the egg yolk mixture.

Pour the mix back into the pan and heat very gently until the mixture coats the back of a spoon - do not bring to the boil.

Allow the mixture to cool completely.

Crumble the Fox’s Christmas Pudding and glace cherries into the mix and pour into an ice cream machine.

Churn for 2 hours, pour into a freezer proof dish and freeze until frozen.

If you are not using an ice cream machine pour the mix into a shallow freezer proof dish, freeze stirring every hour for 3 hours with a fork to remove any ice crystals from forming.
