Ingredients (for 4 people) :Method: Blanch the noodles in hot water for 10 minutes. Drain, rinse with hot water and leave in a colander.
For the sauce, mix together extra virgin soy sauce, cider vinegar and sugar. Adjust to taste. In a hot pan, fry shallots until golden brown then add the sauce.
Blanch the kai lan in boiling water for 1 minute, remove from heat and drain.
Place the noodles and kai lan in a bowl, mix in the sauce, drizzle with sesame oil and Way-On chilli oil with shrimp. Toss together.
