Gingered Vegetable Soup

Type of cooking:  Hob
Preparation time: 40 minutes
Ingredients (for 4 people) :


Cook onion in oil until golden.

Add carrot, potato and butternut squash cut into small cubes to vegetable stock. Cook until vegetables are tender, roughly 20 minutes.

Add red pepper cut into cubes. Add Gourmet Garden Garlic, Ginger and Chilli. If you would like it
spicier and a little more chilli and Gourmet Garden Coriander.

Blend lightly so that the soup is not too thick, add more stock as necessary. Return to heat and serve garnished with cracked black pepper.
