Ingredients (makes 10 waffles) :
-25g cocoa butterMethod: Start by making the batter for the waffles by sifting the flour, baking powder and cocoa powder into a mixing bowl then stir the sugar and salt.
-225g plain flour
-1 tbsp baking powder
-50g caster sugar
-3 egg whites
-200g dark chocolate, melted, to serve
-Pinch of salt
-2 egg yolks
-250ml whole milk
-125ml vegetable oil, plus a little extra for cooking
Next mix in the egg yolks with the milk in a separate bowl, then mix with the water and oil. Make a well in the middle of the flour mixture and pour in the liquid, whisking until your batter goes smooth.
Next whisk the eggs in a bowl until they make soft peaks. Then fold in the eggs to the batter using a third of the mixture to start off with.
Preheat the waffles iron and add a tiny amount of oil. Spoon in large spoonfuls of the batter, close the lid and cook until set - approximately about 1-2 minutes.
Serve the waffles drizzled with melted chocolate.
