Hazelnut and Fig Tart

Pre-heat the oven to 180°C / Gas mark 4

Lightly beat the whole eggs, egg yolks and caster sugar in a large bowl.

Pop the Alpro Hazelnut drink into a small pan and warm until it reaches a gentle simmer (make sure not to overheat this.)

Then stir into the bowl with the eggs and sugar mixture.

Pour the mixture back into the small pan and thicken a little over a low heat until the consistency is smooth and thick, like a custard.

Chop the figs in half and set aside for topping.

Place your tart cases on a baking tray and spoon a little of the mixture into each.

Place half a slice fig on top and dust with icing sugar.

Bake in the oven for 15-20 mins until the mixture sets and the fig is slightly caramelised.

Meanwhile, melt the dark chocolate in a glass bowl suspended over boiling water.

Top with the hazelnuts and a smidgen of melted dark chocolate for the finishing touch.
