Indian Grilled Mushrooms

Origin of dish:  India
Type of cooking:  Oven
Preparation time: 5 minutes
Cooking time: 20 minutes
Ingredients (for 4 people) :

    -4 large field or portabello mushrooms, stalks removed
    -dressed salad leaves, to serve
    -200g Heler Red Leicester with Authentic Indian Chutney cheese
    -1 tsp English mustard
    -1 egg, beaten with a fork
    -Worcestershire sauce and cayenne pepper


Put the mushrooms on a baking sheet, drizzle with olive oil and season.

Grill, turning, until just tender but not brown.

Grate the cheese and mix with the mustard, egg and season with Worcestershire sauce and cayenne pepper to taste.

Fill the mushroom cavities with the cheese mix. Grill until golden and bubbling.

Serve each mushroom with salad.
