Jubilee Cup Cakes from The Devilled Egg Company

Origin of dish:  UK

Cooking time: 20 minutes
Ingredients (24) :

    360g butter, room temperature
    360g plain flour
    360g golden caster sugar
    2 teaspoons baking powder
    110ml milk
    4 large free-range eggs
    300g chopped strawberries


Preheat the oven to 180C

Get 24 cupcake cases ready on a baking tray.

Pop all the ingredients (apart from the strawberries) into a food processor and combine, add more milk if the mixture is too thick.

Mix the strawberries in with a large spoon and then pop into the cupcake cases, until 2/3 full.

Bake for 15-20 minutes until golden brown and springy.

Leave to cool completely before icing.

Then go to town with your creative, celebration side with any Jubilee inspired designs!
