Ingredients (for 4 people) :Method: Lay 4 sheets of foil onto a clean surface and top each with a sheet of baking parchment.
Put a lemon sole on each one and squeeze lemon juice over them. Dot each fish with a little butter and season with salt and pepper.
Wrap up tightly and cook on a BBQ or in the oven for 12-15 minutes at 400F / 200C / gas mark 6, until the fish is cooked through and flakes easily with a fork.
To make the salsa, mix together the chopped tomatoes, the peach and the cucumber. Add the ketchup and honey and serve alongside the cooked lemon sole.
