Ingredients (for 4 people) :Method: Toss the beef in the flour, and heat the oil in a non-stick frying pan to high heat. Fry the beef for 1-2 minutes in batches, ensuring all sides go brown, then set aside.
Use the same pan to fry off the pancetta, shallots, onions and garlic - add more oil if required. Cook for a further 2-3 minutes or until browned.
Place in a casserole dish with the beef and stir well. Now add tomatoes, wine and beef stock to cover and bring to a simmer.
Add the bouquet garni, then cover and cook on a low heat for 2 hours or until tender and thickened, adding extra wine and stock if necessary.
Alternatively, cook in the oven at 140C, 120C fan, gas 1, for 2 hours, or in a slow cooker for 3-4 hours.
Serve with rice or creamed mash potatoes.
