Ingredients (for 4 people) :


Finely chop the onions, then heat two tablespoons of Cotswold Gold in a pan and sauté them until they start to brown.

Add the vegetable stock, peas and chopped lettuce to the pan.

Simmer gently until peas are tender and the lettuce begins to wilt. Add milk and puree the mixture until the desired smooth texture is reached.

Transfer back to a pan and season to taste.
