Pimm’s Sorbet

Ingredients (for 4-6 people) :


Heat the sugar and water in a pan, stirring continuously until the sugar has dissolved and formed a syrup. Place the cucumber, strawberries and mint in the syrup and allow to cool.

The amount of strawberries and mint you use is dependent on how strong you wish their flavours to be – that’s the beauty of this recipe!

Leave until completely cool. It’s often better to leave it a while to give all the ingredients a chance to infuse the syrup.

Once cool, sieve out the syrup into a separate bowl and mix in the orange juice and the Pimm’s. Churn the mix in an ice cream maker, according to the manufacturer’s instructions, then place in a container and freeze.

If you don’t have an ice cream maker, allow the mixture to freeze in a sealed container for about an hour and then churn by hand before returning to the freezer.

Repeat this process until it is smooth, then freeze once more until firm.

Serve alongside a fruit salad of your choice (oranges, strawberries, cucumber and fresh mint work well, as well as peaches, pineapple, melon and fresh cherries).
