Ingredients (for 4 people) :Method: Scrub the potatoes and quarter them. Place in a pan with just enough boiling water to cover them. Put the lid on and bring to the boil. Let the potatoes simmer for 15-20 minutes or until tender, then drain.
Heat oil in a pan and cook onion, garlic and beef strips until the beef is lightly browned. Add the potatoes and mushrooms, cook for 2-3 minutes and season.
Stir through the spinach and sprinkle with pine nuts. Serve in salad bowls.
