Red Rice, Feta and Watercress Salad

Ingredients (for 2 people) :

    - 125g sachet of Camargue red rice
    - 2 medium oranges, segmented
    - 80g feta cheese, crumbled
    - 4 large handfuls watercress


Cook the rice in a medium pan of lightly salted boiling water for 25 minutes or until just tender. Drain in a sieve and run under the cold tap until the rice has cooled. Drain again.

Mix the cooked rice with the orange segments, feta and watercress. Toss to combine and serve.
