Ingredients (for 4 people) :


Begin by removing the pomegranate seeds from the shell with a teaspoon. Then peel and segment the oranges and the blood oranges.

Squeeze any remaining juices from the membranes and skin into a bowl to use for the dressing. Add the pomegranate juice, olive oil and juice from the lemon and stir.

Tear the salad leaves into large pieces and put into a mixing bowl along with the orange and blood orange segments.

Add the ricotta and pine nuts and drizzle with the dressing. Season with salt and pepper and serve.
