Ingredients (4) :


Start by putting the celery in a juicer and season with celery salt.

Transfer to a deep metal tray or dish and put in the freezer and periodically stir with a whisk until frozen (break up the ice crystals as they form which will produce a fine even granite).

In a bowl add all of the remaining ingredients – cover and leave to marinate overnight.

Transfer to a high powered food processor and blend until very smooth.

Strain through a fine chinois and season.

To serve, ¾ fill 4 martini glasses before spooning on some of the granite.

Finish with a little vodka and olive oil.
