Sean Gerrard's Barbecue Asparagus and Parma Ham

Origin of dish:  UK

Cooking time: 10 minutes
Ingredients (for 4-8 people) :


Gently bend and snap the bottoms off your asparagus (never cut them), wrap the Parma ham around the bases of the asparagus and put them in a shallow dish.

Drizzle with oil, and agitate the dish gently to get a nice even coating.

Pop them on the BBQ and keep turning until they are slightly charred on all sides.

Just before the asparagus is ready pop onto the bars the cherry tomatoes and cook until they just start to char and blister.

To serve, place the asparagus onto a plate and drizzle the balsamic syrup around the asparagus along with some olive oil. Place the cherry tomatoes on top and scatter some basil leaves over the dish.

Advice: This recipe was developed by Sean Gerrard of The Castle Hotel, Llandovery. For a vegetarian option, simply omit the parma ham. You could sprinkle with crumbled goats cheese as an alternative.
