Seared Salmon with Roasted Peanut and Chilli Noodles

Origin of dish:  Thailand
Type of cooking:  Hob
Preparation time: 20 minutes
Cooking time: 10 minutes
Ingredients (for 4 people) :

    -200g salmon fillet
    -50g unsalted peanuts, crushed
    -1 red chilli, chopped
    -1 green chilli, chopped
    -small bunch of coriander
    -juice and zest of 1 lime
    -1 garlic clove, chopped
    -1 packet rice noodles (200g)
    -1tsp fish sauce
    -1 bulb of fennel
    -1tsp light soy sauce
    -1 bunch spring onions
    -1 shallot, finely sliced
    -salt and pepper to taste


Slice the salmon into 8 even pieces. Heat up a frying pan with 2 tablespoons of vegetable oil and sear the salmon for four minutes on each side. Baste the salmon with the soy sauce and leave to to rest.

Meanwhile soak the noodles in warm water until soft, drain and put to one side.

Heat up a wok with two tablespoons of sesame oil and add the garlic and chilli, tossing quickly. Add the shallot, half of the lime juice and the fish sauce.

Stir the noodles into the wok, cooking for approximately 6 minutes. Season to taste with salt and pepper, finishing with the fresh chopped coriander & toasted peanuts.

To serve shave the fennel and toss with a little sesame oil and the remaining lime juice. Add the noodle salad (hot or cold) and gently place 2 slices of the rested salmon on the top.
