Smoked Haddock & Cheesy Egg Bake

Ingredients (for 4-6 people) :


Place the bread in the oven at 150°C for 20 minutes until completely dried out.

Peel the potatoes into 1/2 inch chunks and part boil in a pan. They should still be quite firm.

Break up the smoked haddock with your fingers ensuring there’s no skin or bones.

Next, grate the cheeses and chop up the boiled eggs into approx 8 pieces each.

Holding back a little of the parmesan, gently fold all the ingredients together in a bowl and season - too ramp it up that tiny bit whack in some tabasco.

Pour over the cream to just cover the mixture, then place in a small casserole dish.

Crumble the bread & parmesan and sprinkle over the top.

Bake in the oven for 30 minutes at 160 degrees C.
