Spanish chorizo, roasted red pepper and cheddar with smoked paprika mayo on focaccia

Ingredients (1) :


Slice the pepper and focaccia and place under the grill until the pepper softens and the focaccia starts to brown.

Take a tbsp of mayonnaise and add a few pinches of paprika and mix together.

Slice the chorizo sausage into small/medium pieces.

Once the focaccia and pepper are ready, spread the mayonnaise onto one slice (you can opt to keep this as a dip).

Top with the pepper, cheese and chorizo and top with the other slice of focaccia.
