Spicy Garlic & Parsley Mussels With White Wine

Ingredients (for 4 people) :


Clean the mussels by pulling off the beards and scrubbing off any material sticking to the shells. Tap them to check they are safe to eat – those that don’t close, discard.

In a large pan with a tightfitting lid, heat together the butter and olive oil, add the garlic and chillies and cook for 2 minutes.

Toss in the mussels and white wine and bring to the boil. Cover the pan tightly and simmer for 5 minutes.

The mussel shells should all be open (discard those that remain closed as these will not be good to eat).

Ladle between four warmed dishes, scatter with fresh parsley and ground black pepper. Serve with crusty bread.
