Steak sandwich with balsamic tomatoes

Ingredients (for 1 people) :
-1 slice Warburtons 800g white toastie loaf
-2 tsp
olive oil
-1/2 red
onion
cut into rings
-1/2 tsp
sugar
-2 tsp balsamic
vinegar
-100g thin
sirloin
or
rump steak
-5
cherry
tomatoes
-1 tsp wholegrain mustard
Method:
Heat 2 tsp
olive oil
in a frying pan, add red
onion
and cook for 2-3 minutes until soft. Add a pinch of
sugar
and 2 tsp balsamic
vinegar
. Cook for a few seconds more and remove from the heat.
Heat a char grill pan and brush a little oil on both sides of the
steak
. Char grill the
steak
until cooked to your liking – approximately 1-2 minutes on each side for rare, longer for medium to well-done. Place the
tomatoes
in the same pan to cook alongside the steak.
Toast
1 slice of
bread
, spread with wholegrain mustard and top with the red onions prepared earlier. Layer on the steak and place the remaining red onions on top of the steak.
Finish with the char grilled
tomatoes
for the perfect lunchtime sandwich
