Sugar-free Bread & Butter Pudding

Ingredients (for 8 people) :

    -8 slices of Allinsons wholemeal bread, crusts removed and spread with low fat butter or margarine
    -2 tbsp mixed chopped peel
    -75g raisins
    -225g skimmed milk
    -150ml single cream
    -20g Truvia (or other low calorie sweetener)
    -1 tsp lemon zest, finely grated
    -3 large free-range eggs
    -2 tsp Truvia for sprinkling
    -custard or single cream (to serve, optional)


Preheat the oven to 180°C / Fan 160° / Gas 4 and lightly grease a baking dish.

Cut each slice of bread in half diagonally and arrange one layer over the base of the dish. Sprinkle over the chopped mixed peel and most of the raisins.

Cover with the remaining bread and sprinkle over the last of the raisins.

Mix together the milk, cream, Truvia and lemon zest. Lightly whisk the eggs in a small bowl then whisk into the milk/cream mixture and pour over the bread.

Sprinkle with the Truvia and bake in the oven for 20-25 minutes.

It will be crunchy on the outside and soft in the centre. Serve with custard or single cream.
