Summer salmon and broad bean lasagne

Ingredients (for 4 people) :


Make the white sauce by melting the butter in a medium sized pan. Remove from the heat and stir in the flour to make a roux.

Return to the heat and gradually whisk in the soya milk until all mixed. Stir in the chopped herbs, lemon zest and season.

Take a medium sized baking dish; smear the base with some of the white sauce. Top with a layer of lasagne and continue layering up with the white sauce, flaked salmon, broad beans and crumbled feta cheese.

Finish with a layer of lasagne topped with white sauce and the grated parmesan.

Bake in the oven at 190°C/375°F/Gas Mark 5 for 25 minutes until golden on top.
