Sweet Apple, Pear & Fig Roasted Parsnips

Cooking time: 60 minutes
Ingredients (for 8 people) :

    -5-6 large parsnips
    -4 tbsp sunflower oil
    -4 tbsp The English Provender Co. Apple, Pear & Fig Chutney
    -Maldon Sea Salt


Start by peeling the parsnips then cut each parsnip in half so you get 2 long halves. Then cut each half into 3 long pieces.

Heat some water in a pan and boil the parsnips until not quite tender.

Leave to cool and drain well in a colander.

Next, heat the oven to 200C.

Brush the parsnips with the chutney. Heat the sunflower oil in a roasting tin until almost smoking then carefully toss the parsnips in the hot oil.

Roast the parsnips for 20-30 minutes, or until crisp and golden.
