Ingredients (approximately serves 8) :Method: This might seem like a bit of an odd combination but stick with us, it tastes amazing!
Before you get startes, preheat the oven to 180°C.
Next, place the oil in a bowl add half the chocolate and place on top of a pan of boiling water stirring occasionally, until melted. Remove from the heat and set aside.
In a large bowl sift the flower and add the sugar.
Then, puree the sweet potatoes in a food processor until deliciously smooth.
Add the eggs one at a time and beat in, then add vanilla, oil and chocolate.
Pour the mixture over the dry ingredients and mix well, add the rest of the white chocolate.
Pour into two greased baking tins and place in the oven and cook for approx 50 minutes to one hour or until cooked.
Leave to cool down before serving and enjoy!
