Cooking time: 15 minutes
Ingredients (for 4 people) :


Place the turmeric, paprika and water in a saucepan and bring to the boil. Add the quinoa and cook for 15 minutes.

Heat the oil and cook the onion and chopped aubergine until tender. Add the cumin and chick peas and cook for a few minutes.

Whisk the hot water, olive oil, lemon juice and zest, soy sauce, garlic and flaxseed mix together.

Once all the ingredients are combined, pour the dressing over the quinoa.

Garnish with chopped coriander and serve.
