Origin of dish:  Exotic

Ingredients (for 4 people) :

    -1 pouch of Tilda Steamed Basmati Barbecue Rice
    -2tbsps of olive oil
    -a large bunch of spring onions, sliced diagonally
    -50g of mixed sun blushed tomatoes, chopped
    -a small can of drained black eyed beans,
    - juice and zest of 1 lime
    -a few torn basil leaves
    -a handful of fresh coriander, chopped
    -salt and freshly ground black pepper
    -1 pack of flour tortillas
    Crème Fraiche and Coriander Dip
    -4 tbsps of crème fraiche
    -juice of half a lemon
    -a handful of fresh coriander, chopped
    -guacamole dip and lime wedges, to serve


Heat 1 tbsp of oil in a pan and add the spring onions. Heat for 3-4 minutes, then add the tomatoes and beans.

Add the coriander, basil, lime juice and zest to the pan and season well. Heat rice for 1 minute on full power in the microwave, add to the pan and mix well.

Make the Crème Fraiche and Coriander dip by simply mixing the ingredients together and seasoning.

Heat flour tortillas according to instructions, then spread a generous tablespoon of dip over each tortilla and spoon over 2 tablespoons of rice mix.

Roll up tightly. Heat the remaining oil in a frying pan and brown the tortillas to give an all over golden colour. Serve with Guacamole dip and lime wedges.
