Pancake batter

Ingredients (serves 8):

    250g flour
    4 eggs
    1/2 litre milk
    1 pinch salt
    50g butter


Ideally, you should make the batter a few hours before you need it, to give the mixture time to settle.

Sieve flour into bowl, add other dry ingredients, mix, then make a well in the middle. Add eggs, then milk little by little and whisk until you have a smooth mixture.
Gently melt butter and add to the mixture.
Leave to rest.

When you are ready to make your pancakes, make sure you have your frying pan very hot. Melt a knob of butter, then add half a ladle of batter, spread over surface of pan and fry for about three minutes, turning half way.
Advice: Your first pancake will be a test of the batter: if it comes out a little dry, add a little butter or milk to the mixture and try again. If it is too greasy or moist, sieve in more flour, then whisk briefly to get rid of any lumps.

Eat with a topping of your choice - a classic squirt of lemon juice and a sprinkle of sugar, golden syrup or even jam or honey!

Try your pancakes with a glass of dry cider.

I used a mixture of flours like white, a little wholemeal, rye which I had because I bake my own bread. I don't like sweet things very much and cooked pancetta till almost crisp and poured the batter over it, very tasty. i tried some thinly sliced apples, cooked them on one side in a little butter, turned over and then poured batter over to make apple pancakes and served them with lemon juice and light brown sugar. I tried sprinkling pancakes cooked on one side and turned over with grated cheese while other side cooks. I can see that next time the family comes over we will have a pancake feast and each can choose their favourites, sweet or savoury. That should be fun. My favourite? Pancakes with thin slices of pancetta cooked crisp and eaten with golden syrup! Sounds disgusting? Try it.
