Method:

1-Place pastry case in greased flan dish and prick with a fork. Scatter a few dried beans or lentils on base so it will not rise in oven and pre-cook for 30 minutes at 425°F (220°C. Check frequently, then leave in fridge to rest.

2-Make the filling: (or use ready-made confectioner's custard)
Heat milk in a pan with half the sugar, add flour and stir well.
Beat the egg yolks and remaining sugar in a large bowl, add a small amount of warm milk and mix well. Add this mixture to the rest of the warm milk and whisk. Remove from heat and leave to cool.

3-Fill the pastry case with filling, wash and slice strawberries. Arrange on filling and dust with icing sugar.
Advice: Chill before serving.
Do not make this dessert to far in advance.
Serve with cream or vanilla ice cream.
