Ingredients (serves 4):


1- Soak mushrooms for 15 mins in lukewarm water, strain them and cut into strips.

2- Cook the chicken and pork in a small amount of water for about 10 minutes. Cut the chicken into strips.

3- Gut the prawns and blanch for 3 mins in boiling water.

4- Cook the noodles for 5 mins in boiling water without stiring, strain and put to one side.

5- Slice the onions and dice the cucumber.

6- Mix the noodles, prawns, meat, onions, mushrooms and cucumber and arrange in a bowl, on a bed of lettuce.

7- Mix the fish sauce, lime juice, sugar and chilli paste. Drizzle on salad. Decorate with coriander and diced tomato.
