Delicious apple muffins for diabetics

Origin of dish:  North America
Type of cooking:  Oven
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients (serves 6):


1- Space 12 paper muffin cases on an oven tray.
2- In a bowl, combine the cereal, baking powder, soda and salt.
3- In another bowl, combine the apple sauce, honey, oil, egg and vanilla. Add the dry ingredients and mix well. Stir in apple.
4- Share the mixture equally into muffin cups, so that they are almost full.
5- Bake for 20 minutes, or until golden brown. Serve warm.
Advice: It is hard to believe that these aren't made with sugar, they taste great, escpecially when warm.
My nephew is diabetic, and these are his favourite!
