Diabetic meringues

Cooking time: 40 minutes
Ingredients (serves 10):


1- Preheat oven to 250 degrees F. Line a baking tray with baking parchment.
2 - In a small bowl, mix 2 tbsp sugar with almonds, cocoa and cornstarch.
3 - In another bowl, beat egg whites with an electric mixer until frothy. Add cream of tartar and beat on high speed until soft peaks form. Gradually add flavoring and remaining sugar. Beat until stiff and shiny.
4 - Gently fold cocoa mixture into meringue.
5 - - Drop mixture from a teaspoon onto the baking sheet to form small mounds, Leaving 2 inches between each. Bake for approximately 40 minutes, the meringues should be dry and slightly browned. Cool completely. Store in a tightly covered container.

Advice: You could make the meringues larger, take into account that they will need longer in the oven. Or try using a piping bag with a star nozzle.

these are great on their own, with strawberries and cream, or sugar free chocolate sauce.
