Crème brûlée

Origin of dish:  France

Preparation time: 15 minutes
Cooking time: 60 minutes
Ingredients (serves 8):


Gently bring milk to the boil in a pan.
Add vanilla, and leave to infuse for half an hour at room temperature before removing.
Beat eggs together with sugar until mixture is stiff and white.
Add vanilla milk and cream.
Share out into individual ramequins.

Cook for an hour in a cool oven (110°C/250°F).
Sprinkle with brown sugar, then caramelise under the grill.
Serve warm.
